This is one of our go-to recipes at Daymo trade shows. We can leave it cooking throughout the day while demonstrating the Adventure-Q, then sit down to an incredible dinner once the event wraps up. The longer it simmers, the better it gets.

Ingredients
- 2 lamb shanks
- 1 brown onion, finely diced
- 4 sticks celery, finely chopped
- 2 carrots, finely diced
- 3 to 4 garlic cloves, minced
- 500ml chicken stock
- 1 x 400g can crushed tomatoes
- 1 cup red wine
- Salt and pepper, to taste
Taste test notes
The lamb becomes fall-apart tender after hours of gentle cooking, while the vegetables melt into a rich, full-bodied sauce. Serve with creamy mashed potato, rice or crusty bread to soak up every last drop.
Method
- Finely chop the celery, onion, carrot and garlic.
- Preheat the Daymo Adventure-Q over medium-high heat.
- Brown the lamb shanks on all sides, then remove from the pan and set aside.
- Add the onion, celery, carrot and garlic to the pan and cook until softened and lightly browned.
- Pour in the red wine and cook until most of the liquid has evaporated.
- Add the chicken stock, crushed tomatoes, salt and pepper, then bring the mixture to a gentle boil.
- Return the lamb shanks to the pan, ensuring they are partially submerged in the sauce.
- Reduce the heat to as low as possible while maintaining a gentle simmer.
- Cover and cook for approximately 3 hours, or until the lamb is tender and falling off the bone.
