Ingredients

Salmon

  • 2 salmon portions, skin on
  • Salt and pepper, to taste

Sides

  • 4 to 5 large white potatoes, washed
  • 1 bunch broccolini
  • 1 bunch asparagus

Lemon caper dressing

  • Juice of 1 lemon
  • 100ml olive oil
  • Baby capers, to taste
  • 1 teaspoon minced garlic
  • 1 bird’s eye chilli, finely chopped (optional)
  • Salt and pepper, to taste

Taste test notes

The crispy salmon skin adds a satisfying crunch while the fish stays moist and flaky inside. Paired with creamy mashed potatoes, smoky charred greens and a bright, zesty dressing, this is a fresh and flavour-packed meal that’s both comforting and light.

Method

  1. In a small jar, combine the lemon juice, olive oil, baby capers, minced garlic, chilli (if using), salt and pepper. Shake well and set aside.
  2. Boil the potatoes for 10 to 15 minutes, or until tender. Drain and set aside ready to mash.
  3. Heat the Daymo Adventure-Q over high heat and char the broccolini and asparagus until lightly softened with a little colour. Wrap in foil to keep warm.
  4. Return the Adventure-Q to high heat. Season the salmon with salt and pepper, then place it skin-side down in the pan.
  5. Cover with the Daymo red kettle lid and cook for 3 to 4 minutes. Carefully turn the salmon and cook for a further 3 to 4 minutes, or until cooked to your liking.
  6. Mash the potatoes and season to taste.
  7. Serve the salmon with the mashed potatoes and charred vegetables. Finish with a generous drizzle of the lemon caper dressing.
