Hayley’s notes

We’re lucky enough to have a fisherman Dad in our house, so this meal is on the menu at least once a week. Fresh fish makes all the difference, but this recipe works beautifully with your favourite white fish fillets.

Ingredients

  • 300–500g fish fillets (flathead or mulloway work beautifully)
  • 1 packet frozen chips
  • ¾ cup plain flour
  • ¾ cup cornflour
  • Pinch of bicarb soda
  • Salt and pepper, to taste
  • ½ cold beer (enough to make a smooth batter)
  • 1 litre vegetable oil
  • Green salad, to serve
  • Lemon wedges, to serve
  • Tartare sauce (optional)


Taste test notes

The batter cooks up beautifully light and crispy while the fish stays flaky and tender inside. Served with crunchy chips, a fresh salad and a squeeze of lemon, it’s everything you want from a classic fish and chips dinner.

Method

  1. In a bowl, combine the plain flour, cornflour, bicarb soda, salt and pepper.
  2. Cut the fish into pieces approximately 5cm x 2cm.
  3. Gradually whisk the cold beer into the flour mixture until you have a smooth batter with a semi-runny consistency, similar to pancake batter.
  4. Pour the vegetable oil into the Daymo Adventure-Q and heat over medium-high until it reaches frying temperature.
  5. Cook the frozen chips until golden brown. Remove carefully and drain on paper towel.
  6. Dip each piece of fish into the batter, allowing any excess to drip away.
  7. Carefully lower the battered fish into the hot oil and cook until golden brown, crispy and cooked through.
  8. Drain the fish briefly before serving.
  9. Serve immediately with the hot chips, green salad, lemon wedges and tartare sauce if desired.
