Why this recipe works

This is my wife’s recipe, first cooked on the road somewhere in Western Australia. It’s become one of our favourite camping meals because it’s quick to prepare, uses simple ingredients and always hits the spot after a day of travelling.

Ingredients
- 500g beef mince
- Olive oil
- 1 tablespoon garlic paste
- ½ teaspoon Italian herbs
- 1 teaspoon onion powder
- 2 tablespoons tomato paste
- ¼ teaspoon chilli flakes
- 1 x 400g tin chopped tomatoes
- 1 chicken stock cube
- 1 cup sliced mushrooms
- 2 cups water
- 1 cup spiral pasta
- Salt and pepper, to taste
- Grated cheddar cheese, to serve
Taste test notes
This comforting one-pan pasta is rich, hearty and full of flavour. The pasta cooks directly in the tomato sauce, soaking up every bit of goodness, while the melted cheddar on top finishes the dish perfectly. It’s simple camping food at its best.
Method
- Lightly coat the Daymo Adventure-Q with olive oil and heat over medium-high heat.
- Add the beef mince and cook until browned, breaking it up as it cooks.
- Stir in the garlic paste, Italian herbs, onion powder, tomato paste and chilli flakes.
- Add the chopped tomatoes, chicken stock cube and sliced mushrooms. Stir well and cook for approximately 5 minutes.
- Pour in the water and bring the mixture to the boil.
- Add the spiral pasta and stir well.
- Reduce the heat to a gentle simmer, place the kettle lid on and cook for approximately 20 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.
- Season with salt and pepper to taste.
- Serve topped with a generous handful of grated cheddar cheese.

Anything the chef would change for next time?
- For even more flavour, add 1 teaspoon garlic powder along with the seasonings.
- For extra protein and fibre, stir through 1 cup of drained canned lentils before serving.
- If cooking for two, don’t worry about leftovers. This reheats beautifully the next day.
