This recipe uses everyday supermarket ingredients, comes together with very little preparation and is packed with bold taco flavour. It’s a great weeknight meal at home and an even better camping dinner after a day outdoors.

Ingredients
- 340g penne pasta
- 450g beef mince
- 2½ cups beef stock
- ½ cup thickened cream
- ½ cup grated cheddar cheese
- 1 packet taco seasoning
- ½ cup salsa
- 1 tablespoon olive oil

Taco, pasta and beef mince… what more could you want? This rich, creamy one-pot meal is loaded with Mexican-inspired flavour, tender pasta and plenty of cheesy goodness. It’s guaranteed to become a camping favourite.
Method
- Heat the Daymo Adventure-Q over medium heat and add the olive oil.
- Add the beef mince and cook until browned, breaking it up as it cooks. Drain any excess fat if required.
- Stir through the taco seasoning with a small splash of water until evenly coated.
- Add the penne pasta, beef stock and salsa, stirring well to combine.
- Bring to a gentle simmer, then cover with the lid, leaving it slightly vented.
- Cook for approximately 10 to 12 minutes, stirring every 2 to 3 minutes to prevent the pasta sticking.
- If the sauce becomes too thick before the pasta is cooked, add a small splash of water.
- Reduce the heat to low.
- Stir through the thickened cream and grated cheddar cheese until the cheese has melted into a smooth, creamy sauce. Avoid boiling at this stage to prevent the sauce from splitting.
- Turn off the heat, replace the lid and allow the pasta to rest for 3 to 5 minutes. The sauce will continue to thicken as it rests.
